Homemade Oatmeal Creme Pies Ingredients
- 1 and 1/4 cups (282g) unsalted butter, softened to room temperature 1 cup (200g) packed dark brown sugar
- 1/2 cup (100g) granulated sugar
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 1 Tablespoon (15ml) unsulphured or dark molasses (don't use blackstrap; I prefer Grandma’s brand)
- 1 and 1/2 cups (188g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 3 cups (255g) quick oats (not whole oats)
Creme Filling
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature 3 cups (360g) confectioners’ sugar
- 3 Tablespoons (45ml) heavy cream
- 1 and 1/2 teaspoons pure vanilla extract salt, to taste

- Fire up your magical heat box (oven) to a cozy 375°F (191°C).
- Prepare your enchanted cookie landing zone: Line a baking sheet with parchment paper or a silicone mat.
- Time for the Butter Ballet: Whirl the butter and sugars together in your trusty mixer until they're as light and fluffy as a mountain breeze.
- Add a dash of adventure: Beat in the egg, vanilla, and molasses - nature's sweet treasures!
- In a separate bowl, gather your dry ingredients like a woodland forager. Whisk them together with the enthusiasm of a cheerful chipmunk.
