  • 1/2 cup (100g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 Tablespoon (15ml) unsulphured or dark molasses (don't use blackstrap; I prefer Grandma’s brand)

Homemade Oatmeal Creme Pies Instructions

Embark on a delightful baking journey:

  1. Fire up your magical heat box (oven) to a cozy 375°F (191°C).
  2. Prepare your enchanted cookie landing zone: Line a baking sheet with parchment paper or a silicone mat.
  3. Time for the Butter Ballet: Whirl the butter and sugars together in your trusty mixer until they're as light and fluffy as a mountain breeze.
  4. Add a dash of adventure: Beat in the egg, vanilla, and molasses - nature's sweet treasures!
  5. In a separate bowl, gather your dry ingredients like a woodland forager. Whisk them together with the enthusiasm of a cheerful chipmunk.
  6. Slowly introduce your dry ingredients to the wet, like new friends at a lodge mixer. The dough might get a bit shy (thick), so don't be afraid to use your hands!
  7. Scoop generous dollops of dough onto your prepared sheet, giving them plenty of room to spread their wings (about 3 inches apart).
  8. Let them bask in the warmth of your oven for 10 minutes, or until they're golden like a perfect Smoky Mountain sunset.
  9. Allow your cookies to cool and reflect on their journey for 5 minutes before moving them to a wire rack.

For the heavenly filling:

  1. Whip the butter until it's as light as a cloud floating over the Smokies.
  2. Add the confectioners' sugar, cream, and vanilla, then beat until it's fluffier than a baby bear's fur.
  3. Taste and add a pinch of salt if needed - just like how a hint of adventure makes life sweeter!
  4. Spread this cloud-like filling on half of your cookies, then sandwich them together with their soulmates.

Store your little pieces of joy in an airtight container, where they'll stay fresh for 2 days at room temperature. After that, tuck them into the refrigerator like hibernating bears.
